Chia Seeds, Hot Cheetos, and Takis

This week has been full of discoveries.

First of all, chia seeds are the shizz.  After months of following Kath Eats and drooling over her oatmeal concoctions, I wondered why my oats never looked that delicious.  I use mashed banana and vanilla–just as she does–but my oats always looked a little sad next to her fluffy bowls.  Welp, after further analysis of  Kath’s recipe, I’ve discovered that chia seeds are the secret to fluffy.  These little suckers make the most phenomenal bowl of banana oatmeal.  Phenomenal!  Seriously, if you’re not using them, you’re missing out on the most banana-bread-y bowl of oatmeal of your life.  Once you try it, you will be hooked.

Secondly, I discovered that I will not be moving out as quickly as I had hoped. I kept most of this news off of the blog (since nothing was official and I didn’t want to *jinx* anything) but now I’ll give full disclosure.

About two and a half months ago, I put an offer on a condo in the city.  It was beautiful and I could really picture myself living there.  Best of all, it was in my price range in a safe area.  I went through the process of formally submitting an offer, negotiating a bit, and then signing a contract for our agreed-upon amount.  I hired an attorney and had a home inspection done.  Then–since it was a short sale–the seller’s lenders (he had two) had to approve the sale.  After painfully waiting for the banks to make a decision, it finally came last Thursday…a big fat NOT APPROVED.  In other words, the seller’s lenders will not accept the sale at the price that the seller and I agreed upon.  In fact, they countered with a demand for a substantial amount more.  I’m not in a place to pay that amount so I’m going to take a bit of advice from Tina’s (the blogger behind Carrots ‘n Cake) grandmother and accept and adjust.

*Sigh* I know this rejection is probably for a reason, but still–I’m bummed.
